Case Study:

In many parts of India, seasonal fruits such as mangoes, lemons, and tomatoes are available in large quantities during certain months. To prevent food wastage, households and food industries use different food preservation methods, including the use of chemical preservatives.

In a small food processing unit in Lucknow, a company produces bottled fruit squash and mango jam. To increase the shelf life of these products, the manufacturer adds small quantities of preservatives such as sodium benzoate and potassium metabisulphite. These chemicals help prevent the growth of microorganisms such as bacteria, yeast, and mold that cause food spoilage. 

For example, sodium benzoate is commonly used in acidic foods like fruit juices, pickles, jams, and soft drinks because it effectively inhibits the growth of yeast and molds. 

Traditional Indian preservation methods also use Class-I preservatives such as salt, sugar, vinegar, and edible oil. These substances reduce microbial activity by creating conditions that prevent microorganisms from growing. 

Chemical preservatives are generally used in very small concentrations so that they do not affect the taste or safety of the food. Their main function is to slow down microbial growth and chemical reactions that cause spoilage, thereby extending the shelf life of food products. 

For instance, when preparing lemon squash, a small quantity of potassium metabisulphite (KMS) may be added along with sugar and citric acid to keep the drink safe for longer storage.

Thus, food preservation chemicals play an important role in ensuring food availability, reducing wastage, and maintaining food quality for longer periods.
